Tracking Project Progress - Project Management Software?

Those of you who work in any sort of development capacity know that the constant moving targets are challenging when it comes to showing what progress has been made. I find myself in a situation where a good task management / project management tool would be extremely helpful in tracking tasks outstanding, task completion, and spec changes. I've used (and love) OmniFocus but that is OSX only. Any recommendations for tools that have worked for you? Easy of use and simplicity are key, so things like MS Project are kindly being ruled out.

Have you looked at OmniPlan? It fits the bill exactly: easy to use & simple.

For me that sounds as if the actual problem is not solved by having a PM tool

I love the omni toolset - I'd be using OmniFocus if I could, just to log what has been completed. And yes AVt, you are correct, a Project Management application won't solve the problem - what I want to do is have a tool or process that helps keep track of current specs and changes/additions to specs so that I can manage expectations and be able to show that I'm being productive (which, in this case, means doing what I'm asked).

For a while I was running OSX in VMWare on XP - we just got windows 7 machines, so that no longer works - at least I have not figured out how to install OSX or run it with VMWare on 64bit windows.

Thanks for the suggestions though - do you guys find agile dev processes to be helpful with constantly shifting targets? I'm new at this firm, and the firm itself is new, so there's no established norms, nor are there clear specs.
